These bars contain very little sugar per serving (less than 4%) whilst also providing 10g protein and 2g fibre (although this could be upped by adding in ground flaxseed, for example).
Ingredients:
- 90g protein powder (I used a vanilla one by Vega)
- 2 large eggs
- 350g yoghurt or alternative (I used Tesco’s low sugar soya yoghurt)
- 270g quinoa flakes (or you could use oat/buckwheat flakes if you prefer)
- 2 tbsp cinnamon
Mix everything together and bake for around 25 mins at 160°C or until just set. Leave to cool before slicing.
If you don’t mind a little extra sugar, you could mix in frozen blueberries or raspberries before baking (being frozen helps them hold their colour and shape whilst the bars are baking).
These are delicious served warm or cold, ideally with a little more yoghurt and some fresh or frozen berries!
