Drumroll please for one of my favourite weeknight dinners! Bonus points as it is super easy to prepare – root veggies go in the oven to roast while you faff around with things that need to be done at the end of the day (laudry, packing gym kit for the next day etc), then mackerel get fried in the pan followed by your green veggies and boom you’re done 😀
My veggies were: purple sweet potato, swede, turnips and cauliflower (along with lots of kale, and a bit of asparagus, broccoli and spinach thrown in for good measure!). Oh, and some beetroot, because beets + mackerel = 👌
