Sausages with fennel and leek mash


This is an awesome choice for a nice feed-up after the gym!

I started by roasting some finely chopped leeks and 2 bulbs of fennel, whilst some sweet potatoes were boiling for the mash (I roasted the skins too, just for snacking!).

Then, I grilled some delicious Heck 97% pork sausages for about 20 minutes! (I think the longer sausages are grilled the better…I love the crispy/chewy texture of the casing when they’re a little bit blackened!).



I served this all with some red cabbage roasted with balsamic vinegar and some puréed rhubarb (both for a bit of tang to complement the salty pork and sweet mash) as well as lots of kale and spinach.
