Coconut chia bread rolls


Who else loves the smell of baking bread?


This is a really tasty bread recipe. I used yeast as the main raising agent – I don’t use this often, but thought I’d test it out once more. It worked quite well, although I probably should have left the dough to prove (I was too impatient…)

~230g almond flour

~40g chia seds

~40g ground flaxseed

~50g coconut flour

-4 eggs

-1 tbsp dry yeast

-1 tsp baking soda

-1 cup almond milk (I used Rude Health)


Prepare the yeast as per instructions (I whisked it into the warmed almond milk and left for 15 minutes). Add all the other ingredients. Prove (if you’re patient enough!). Bake! (I baked it for about 30 minutes at 180 degrees C.


This made 6 small bread rolls and a loaf of bread (about 8 slices).

I topped the rolls with some Tribe seed packs: Paprika and Chilli for the bread rolls and Tokyo Tamari for the loaf.

The bread is delicious toasted and topped with avocado (and, in this case, quail’s eggs!):
