Sunday afternoon meal prep is one of my favourite times of the week – I love making huge batches of delicious food to get me through the week ahead!
Frittatas are an easy go-to dish – for this version I used about 500g diced sweet potato, 3 large red onions, lots of kale, 1 carton egg whites (about 15 whites) and 4 whole eggs, cooked up in some coconut oil. This made about 8 portions.
