Yay for a roast dinner! And double yay for bank holidays.
Tonight’s dinner was very much one that cooked itself – who doesn’t love those?
I made a big batch of roast veggies (butternut squash, leeks, courgette and tomatoes) and some shredded sweetheart cabbage and kale to go with a nice piece of unsmoked gammon, which I seared in the pan before roasting on top of the veggies for around 30 minutes.
