Another really easy and delicious slow-cooker recipe.
I simmered diced pork loin (or you could use shoulder) with onions, garlic, sage, celery, parsley, a little of each of apple cider and balsamic vinegar and chopped apple.
Once the meat was tender, I removed the juices and reduced them down to make a thick, almost caramel-like sauce, which I drizzled over the pork to serve. This was SO yummy – it was rich and sweet, as all the flavour of the apples and pork was concentrated.
Serve with some steamed green veg and enjoy!
