No extensive prologue today. I basically bought a huge load of shrimp, and decided to cook them a new way…
I marinated the shrimp (about 800g) in a mixture of fresh orange juice and pulp (from 1 navel orange), 2 tbsp chili flakes, 1 tbsp gluten-free soy sauce, 1 tbsp fish sauce, 4 cloves minced garlic, sesame seeds and a knob of minced ginger. When it was time to eat, I seared them with the juices in a bit of coconut oil.
We had this with kale (duhhh…) and egg-fried cauliflower rice.
I also marinated a small portion of the shrimp in lemon juice and garlic, and seared these the same way. These are nice for those individuals who don’t like spicy food! Incidentally, the juices made a lovely broth…
