Oooh…another yummy lunch. This was a quick one – I’d roasted the fennel for about 40 minutes at 350 F beforehand, so whilst I was preparing everything else I just popped it back in the oven for a little bit to crisp up again.
I scooped out the inside of a pear and chopped it up, before putting it in a pan to warm it up with crab (sadly, from a tin – we can’t get delicious fresh crab over here!) and a bit of spinach. I put this back into the pear and sprinkled it with the crispy fennel and the fennel fronds, served with some lettuce.
Just as an amusing side note, I find it very difficult to photograph my food mainly because I eat so much that there is no way to make it look appetizing in a photo. Contrast the above photo with the following one (where I added the other half of my food to the plate):
Yep…you can’t even see the other half pear. Shameful.
